You just use the gesture to copy from the iPhone and then on the Mac, go to
wherever it is you want to paste the info and use the usual command-v to paste.
From the opposite perspective, command-c on the Mac to copy and on the iPhone,
use the edit menu on the rotor and select, paste, and double tap to paste the
items from the Mac clipboard. I will often do this with text information I want
to exchange between devices.

Do note though: that this will copy everything though that VoiceOver will
speak.
What I mean is that even if VO read the WiFi password, if you've got
anything else on that line of text. VO is going to copy everything though.
Just something to keep in mind. You can always paste it, sort the editing
out and re copy the info you want. In which case, you may as well just
copied it your way nevertheless, it's a handy gesture for copying a
number, email etc.
