Hello,
There may be a ArchLinux wiki article on pkgbuild scripts for projects in mercurial. If not then there will be some in AUR, which you could use as an example, eg. http://aur.archlinux.org/packages.php?ID=24719

As for knowing when you may hit problems doing make install, if you don't have or the distribution does not have a package for what you want to install there should be no issue, if it does then where possible I would advise using the package.

model. Mine has to be different, though, because this is a Mercurial

Did you do make install for liblouisutdml? You probably would need to do
make install with sudo or su to get the correct user permissions.

In this case there should be no issue to do make install because
ArchLinux does not provide a package for it and therefore you will not
have make install damaging/altering something installed by pacman.

At some point it would be nice to have a ArchLinux package for
liblouisutdml, so if you create a pkgbuild script either add it to AUR
or post it here.
