The gcode center (x0y0) is the center point of the three towers. If
your bed is a little off, maybe it's just the bed being not centered?
If you've got a good first layer and the resulting prints are
dimensionally correct (it looks like you've run the advanced delta
calibrate), then I wouldn't worry too much if the bed has an xy
offset.
