On my system I can freeze all slew with Ctrl Space

Data\Microsoft\FSX\Controls folder, that's where you'll find your keyboard 
definitions.
After SP1 mine has 'Z' as the SLEW_ALTIT_MINUS, which I assume equates to 
Slew Down Slowly.
