Just saying "they are very graphical" leans me away from that as being a viable 
vocation. A lot will depend on whether there are other ways to interface with 
the applications. That will require opening a dialog with each of the 
application providers to discuss any possible alternatives.

For example I have an application at work that gives a graphical summary in 
chart and bar graph form that I can't use. However the underlying data to those 
graphics are available in Excel spreadsheet format, so I can at least analyze 
and arrange the data myself to visualize the results that others can see at a 
glance.

  I'm working with an IT person who has been gradually losing his vision and 
now at the point where he needs to use JAWS for computer access. His experience 
has been with application monitoring, using products such as Foglight, 
OpenView, IBMITM, which I understand are very graphical. Does anyone have 
experience using JAWS with these types of applications. This person wants to 
know if it's feasible to pursue this vocational path.
