Beg your pardon. I don't think there is a way to turn of the search
tabs, but you can press F6 to toggle between the message list and the
folder list.

You can turn off the To-Do bar from the View menu or with Alt + F2.

I can't help with recommendations for setting it up I'm afraid; I've
only
used it a couple of times.

In Outlook 2007 when one tabs from the message list to the folder list
and
beyond there are several quick search tabs.  Is there a way to turn
these
off so they do not show?
As well, is there a post or document which makes recommendations for
setting
up Outlook 2007 to enhance how JAWS 8 works with the program?
I am finding that various menu options and tabs are not being spoken.

You are not imagining or hearing things.
 
I too have the language detection turned off by default.
 
I first checked the site out with language detection turned off and did
not
hear what you claimed. Then I turned this option back on thru the jaws
verbosity and heard that magic word.
 

        I am using 7.1 on an xp system with all the updates.
