Sorry to be late on this one, but the last time I purchased a laptop, I
contacted FS about sound and video card compatibility. They wouldn't volunteer
brand names and types. When I told them the particular video card that came by
default with the laptop that interested me, they assured me it would work fine
with JAWS. It didn't, and I had to obtain a replacement soon after my purchase.
In short, Dave and Will, this list might be a better source of information
for answers to this vexing question.

w/r sound card and video card compatibility, that's a much better question
directed to Freedom Scientific. They should know, if anyone does.
Go for dual core processors. Frankly given what you described I'd recommend a
desktop. Get two hard drives, identical size,at least 1Tb and server-class for
reliability. Have one drive be a mirror of the other so that you are always
backing up everything you do.
Windows 7 Pro, and you might as well start working in 64-bit mode.
The biggest cause of failure in a PC is heat. That's why laptops often have a
shorter life -- it's hard to get all that heat out. Get a desktop with large,
slow-moving cooling fans and a dedicated fan for the processor, and at least
50% more power supply than needed. All these will help immensely to get the
heat out of the cabinet.
All these fans and extra power capacity will likely add ~$200 to your budget.
1Tb drives in server class are around $180 each. Expect to spend ~1800 or up
depending on any DVD burners (also a good idea for data backup) and other
peripherals.
