Okay,
But, I really don't understand how Excel is set up. I know there are rows and Letters assigned to them, but how would I create the various columns and enter the subsequent data?

Hi,,
You can either create a spreadsheet in Excel or a table in Word. Either of 
them should not be hard.

For Excel:
Open a new Spreadsheet in Excel.
JAWS will read off the cell numbering (ex. A1 etc.)
You can move right and left; up and down using the arrow keys or you could 
use the tab and shift+tab key to move left and right.
