It's in the programs menu, under the version of JAWS you want to remove. Choose uninstall. You'll be given the option to repair, modify, or uninstall. You would choose uninstall.

To degrade your computer's performance, JAWS has to be running. Just
having it installed on your system only takes up hard drive space, not RAM
or other system resources. That having been said, uninstalling the earlier
version will not remove your authorization.
