Good afternoon Kimberly,Yes, once scanned and converted into a PDF or MS Word document the files can be saved as text. All aspects of the product that I have investigated so far are accessible with JAWS.

Idon't remember my model number but it is a sheetfeed scanner that processesapx. 16 double sided pages / minute. The scanner comes with Adobe AcrobatProfessional and Abby Finereader. It is quite accessible with JAWS and can take a stack of papers and convert it into a text-based PDF at the push of abutton. The software works with Windows XP and Vista. My model was around$400 USD. As for VOIP, I would recommend the Asterix server. This is a linux based, and I believe open source, solution that can be managed from configuration files and xml files. I'm sure that there are front-end GUI interfaces for it, but I don't know how accessible they would be. If you would like any more information feel free to contact me off list.
