Getting JAWS to Better Handle Database Forms

Hello:

I'm doing some research work for a client's recommendation.  He's a practicing 
psychologist who is blind.  I've evaluated him and believe that he will need 
JAWS to do his job.

The practices he will work in use a tool called TheraScribe to maintain patient 
records.  I've downloaded the demo of this program and am doing some testing 
using JAWS 11.  The tool creates and accesses its database using SQL Server 
2005.  Here are a couple of questions.

The database forms I've looked at appear to have field labels to the left of 
each data entry field.  However, when I tab from field to field, JAWS won't 
read the field labels.  I've used the Create Prompt option of the Run JAWS 
Manager dialog to create spoken prompts on each field on one of the forms.  
Then what happens is as I type into each field, such as the last name field, I 
hear 'last name' which is my custom prompt followed by each letter.  Is there a 
way to get JAWS to read the existing field labels?  I've so far played around 
with re-classifying the window and that hasn't helped.

Another thing.  There are some fields where you pick from a list of values.  
When I arrow down these, JAWS doesn't read each value.  I have to tab then 
shift tab to hear what value I am on.  Is there a way to change this behavior?
