I've used an ocr package to read faxes which arrive via our network fax
interface and then are emailed to us as an image file, but I'd think it
would end up being the same sort of arrangement for you.
There's a free ocr package that comes with office 2003, and it's burried
under the start menu choices for office, office tools, microsoft
document imaging.
When I brought up the image, I could choose a menu choice that would ocr
it and send the results to Word.
Is that what you meant in "dealing with it"?
