Tony,

Project Assist, at The Iowa State Center have produced some excelent
tutorials for using JAWS with various applications.
They have done one for JAWS 4.5 and Access 2002, and one for JAWS 3.5/3.7
with Access 2000.
Their web address is:
http://www.blind.state.ia.us/assist/index.htm

Here's the info about the one I tested for them some years ago:

ASSIST With Windows - JFW with Access 2000 Tutorial

Creating Access (2000) Databases with JAWS For Windows 3.5 / 3.7

The Creating Access Databases with JAWS For Windows 3.5 / 3.7 tutorial
covers beginner and intermediate topics. It includes database concepts and
creating
Access tables, forms, queries, and reports. You will learn how to create a
simple, one-table Address Book database and a multi-table, relational
Personal
Finances database. This tutorial is designed for those who are new to
Access - not those who are new to Windows or the JFW program.

The tutorial uses JFW keystrokes, verbal information, and strategies.

Taped Tutorial. If you purchase this tutorial on cassette tape, you will
receive 5 tapes. (The tutorials are recorded at slow speed (15/16 isp).)

In addition to the tapes, you will receive a disk that has exercise files,
the tutorial files, and configuration files. The tutorial files will be in
three
formats: ASCII Text, Word, and a Braille Ready File. You may use these files
for reference or to produce a Braille or large print version of the
tutorial.

The taped tutorial costs $50.00 (Iowans are subject to 6% sales tax).

Electronic Tutorial. If you purchase the electronic version of the tutorial,
you will receive a Setup.exe file on disk. The Setup.exe file is an
executable
file that automatically creates the C:\Assist\ folder on your computer and
copies the exercise and tutorial files to that folder. You will receive the
tutorial files in three formats - Word, ASCII Text, and a Braille Ready File
(BRF). These files make up the electronic version of the tutorial. You can
open and read the files in your word processor (WordPad, Microsoft Word,
Microsoft Works, or Corel WordPerfect). You can use the Braille Ready File
to
produce a Braille version of the tutorial. (You do not need a Braille
translation program.)

This tutorial in electronic format only costs $40.00. (Iowans are subject to
6% sales tax).

Here is the info for the later tutorial covering Access 2002 with JAWS 4.5
which I've not actually looked at myself:

Access 2002 with JAWS For Windows 4.5

The Microsoft Access 2002 with JAWS For Windows 4.5 Tutorial for Beginners
contains introductory information and step-by-step instructions for using
Microsoft
Access 2002 with JAWS For Windows (JFW) 4.5. It uses JFW keystrokes, verbal
information, and strategies.

For those interested in achieving Microsoft Office Specialist certification,
the tutorial covers tasks that are tested in the Access 2002 - Core exam. If
you simply want to learn how to use many of Access's features for using and
creating databases, this tutorial will provide you with a comprehensive
introduction
to Access 2002.

This tutorial is designed for those who are new to the Microsoft Access
program. This tutorial assumes you are familiar with Windows concepts and
features,
such as dialog boxes, toolbars, menus, and keyboards shortcuts.

And, for good measure, here is a list of the currently available tutorials
which I've just lifted off their website:
