Courier-IMAP gets the path to the Home Directoy & Maildir from the
authentication module (from courier-authlib package) it uses.
Depending on the authentication module you want to use, then answer to
your question is slightly different. A thumb rule is that if the
authentication module does not specify a Maildir, then the Home
Directory is suffixed with the MAILDIRPATH variable from the imapd
config file (the auth module is required to provide a Home Directory).
So, in the simplest virtual hosting scenario with authuserdb, you'd
specify home=/home/Mails/whatever in the userdb entry for
user=whatever and MAILDIRPATH=Maildir in imapd to achieve what you
want to do.
