i'm in the oven camp. y'all may recall i was an army cook and we did some
major bacon. of course kp's were cleaning our ovens so MA.. messes not a
problem, and we did all our bacon on 36 x 48 sheet pans in very hot ovens.
in private life i've learned about the wonders of parchment paper,
particularly as a bacon splatter shield. and in the oven is the easiest way
to turn out copious quantities (measured in 100 serving units) of our
favorite dead pig product, hands down.
