I guess I can help you with the first 2 questions. 

1. For instance, I want to write score for string quartets. So, what should I 
do?

You can view the template files in your computer. Please following steps: 
1. open start menue
2. find lime 9 in programme files
3. after you click into the submenue, find templates

There are different demo scores. You will be able to view the partnames and 
order of instruments order. 

2. If I want to write scores for some different instruments such as for piano, 
violin and flute, what should I do?
You can use the new part unction in "parts and voices" option. You can add and 
name each part one by one. Then you will be able to create the scores. 

Hope you can create the orchestral scores.
