Tentatively, I would say 'yes.' 

There is considerable power in the laptop Rick describes. The drives will be
slower than a server, and heat might be an issue under sustained loads.
Except for network booting, application starts and Internet downloads, loads
will tend to be bursty. Database writes could be a minor problem for some
applications. A second NIC will be necessary for gateway functions. The
number of workstations will be limited when applications are memory hogs.

For most uses, such as demonstrating LTSP to an organization or conducting
onsite training, a laptop server is largely upside. Can't beat it for
portable-ness.
