There are a couple of places that you can enable logging for POP:

1. open the properties for the server and go to the diagnostic logging tab,
and you will be able to enable diagnostics logging for the POPSvc, this
information will be recorded into the Application Log in Event Viewer.

2. Or you could enable client side logging through Outlook Express

If you enable logging on the server remember to disable it after the problem
has been resolved, or you will fill the Application Log and suffer
performance problems.
