We have users using Outlook 2003 with Exchange 2003. A couple of users yesterday both experienced their email signatures disappearing. At approx 2.30pm they have emails in their sent folder showing signature appended. About half an hour later both reported signatures were lost and sure enough when I checked the signature option in tools/options/mail format the signatures were no longer available for selection and were indeed missing.
