I would like to see stuff like:

Secure OWA publishing (a-la Dr. Tom)
Port tightening on net facing exchange boxen
Relay restriction or "not just authenticated users"
Faking exchange SMTP greetings (am led to believe is possible if not
supported)
Cook your own exchange honeypot
Exchange interaction with security/authenication techniques or "what
ports DO you need to run a site connector across a firewalled WAN link
using IPSEC"
