Great info I was wondering myself if I needed to select the mailboxes, I
thought maybe even though the IS store was being backed up but thought
things would be missed due to open Outlook cliets and could not be
remounted after restoring.

The general consensus is that brick level backups (backup the mail boxes
themselves) is not needed, and since you HAVE to back up the IS, it is
redundant.
