Today's Recipe:
Shrimp and Crawfish Rolls
Ingredients:
1 lb. medium cooked Louisiana shrimp, peeled and deveined
1 lb. Louisiana crawfish tail meat
2 green onions, chopped
1 stalk celery, finely chopped
3 Tbsp. mayonnaise
1/2 tsp. lemon zest
1 Tbsp. fresh lemon juice
1/2 tsp. chopped fresh parsley leaves
1/2 tsp. fresh thyme leaves
1/2 tsp. Cajun seasoning
4 hot dog buns or hoagie rolls, split
2 Tbsp. salted butter, melted
Fresh parsley leaves
Directions:
In a large bowl, gently combine shrimp, crawfish, green onion, celery,
mayonnaise, lemon zest and juice, parsley, thyme and Cajun seasoning. Taste and
adjust seasoning as needed. Cover shrimp mixture, and refrigerate until
chilled, about 30 minutes.
Brush interior of buns with melted butter. In a large skillet over medium heat,
add buns, butter-side down, and cook until lightly browned. Divide shrimp
mixture evenly between buns, and serve garnished with parsley, if desired.
Cooking/Prep Time: 45 minutes

Bubba was driving along when all of a sudden he had a flat tire. He pulled off
to the side of the road, jumped out of his car, walked down the hillside and
picked a bunch of wildflowers. He proceeded to put one bouquet of flowers in
front of the car, and one behind it. Bubba then got back into his car to wait.
A passerby studied the scene as he drove by and was so curious, he turned
around and went back.
"What's the problem?" asked the passerby.
"Ah have a flat tarr," replied Bubba.
In response, the passerby asked, "But, what's with the flowers?"
Bubba replied, "When you break down, they tell you to put flares in the front
and flares in the back"!

Today's Cooking Tip for Andouille Sausage:
Most Andouille Sausage is already precooked so you really just need to heat it
up by broiling, grilling, or steaming being careful not to pierce the sausage
with a fork to preserve the juices in the sausage.
Today's Embarrasing Cooking Story posted at our message board by Dhodak:
"When I was a child, my mother used to make a lot of homemade soups. She had
just finished making a big pot of soup and had left it on the table to cool.
Our mexican dog had gone in to get a drink of water and we were all sitting in
the livingroom. Suddenly my mom said "Boy, Blondie must be awefully thirsty,
she's been drinking for quite a while now. She got up and looked in the kitchen
and to her amazement the dog had somehow gotten up on the table and was happily
lapping up her soup!"
