Hi,
I say stick with Drupal 6 and move to Drupal 7 when you are ready. I also say 
that you should still be able to keep it simple in D7. You already know most of 
what you need to know for Drupal 7. It's just a matter of learning where they 
moved some of the stuff in the menus for the simple things. You can gradually 
get used to that within a few days, I'd say. The most important thing is always 
to get your content up on the web and you can always go from there.
