I would say start with 7 and forget 6. If you use 6, you are going to create
a situation where you are in mid development, then 6 is discontinued.
Besides, d6 has tons of memory management problems, page load issues, and
other things that can possibly overload the server if it gets huge enough.

Hi,
I say stick with Drupal 6 and move to Drupal 7 when you are ready. I also
say that you should still be able to keep it simple in D7. You already know
most of what you need to know for Drupal 7. It's just a matter of learning
where they moved some of the stuff in the menus for the simple things. You
can gradually get used to that within a few days, I'd say. The most
important thing is always to get your content up on the web and you can
always go from there.
