I made this last night. I used four chicken thighs I cooked in the crockpot,
and two that were left over from New Year's lunch at Mom's.
It turned out really well.
Thanks,
Dani

Hi Sugar,
We made this over the weekend and really enjoyed it.
We used butter garlic marinated chicken breasts, which I cooked and
diced prior to putting the casserole together. I did end up using the
Cholula sauce, which gave it a really nice flavor. I did also add a little
Tobasco.
I cooked some corn with it, and ended up mixing the leftover corn
with the remaining chicken casserole, and we will probably finish that off
tonight.
Thanks for a good recipe!
Pam

Hi Donnie
Sorry this is late.
I've been ill with the flu
But yes
If you do like I do, I like to purchase the precooked chicken and then
cut or shred it, cook the bacon and then put it together Yes milk does
soften the blow of the heat..smile Enjoy sugar

Hi, Sugar.
Just to be sure I'm understanding this right ... the bacon should be
cooked, but the chicken should be raw?
Can't wait to try this. I like Chalula, too, but have Frank's in the
fridge.
I think the mayo or sour cream and cheese should tame the heat from
the sauce. I've seen tips where they say if something is too hot, you
should drink milk to tame the heat.
More Later,
Dani

Hi Pam
The hot sauce is your choice.
I like chalula or Tapa Tio.
My brother is not much of a hot sauce person so he sticks to Pace.

This does sound really good.
Do you know what kind of hot sauce this uses? The amount sounds like
quite a bit for something like Tobasco sauce, so I was curious what
kind was used.
Thanks for posting this.

LOADED CHICKEN & POTATO CASSEROLE
This was probably one of the most flavorful casseroles I have ever
tried, and even my kiddos ate it up...and trust me, they are 3 picky
eaters! I paired this casserole with a salad and had dinner on the
table in no time!
Since it has both your potato and meat in it, add a veggie or salad
and dinner is ready to go!! This would also be a great idea to make
when having company over or if you are bringing a meal to a
friend/family!!
1 lb. boneless, skinless chicken breasts, diced
6 medium, red potatoes, diced
1/3 cup mayonnaise
1 tsp salt
1 tsp black pepper
1 tbsp. Paprika
2 tsp. garlic powder
2 tbsp. hot sauce
2 cups Mexican blend cheese
1 cup bacon, cooked and crumbled
1 cup green onion, diced
Preheat oven to 400F and grease a 9 x 13 baking pan.
In a bowl, combine the chicken, potatoes, mayonnaise, salt, pepper,
Paprika, garlic powder, and hot sauce.
Pour mixture evenly into greased pan.
Bake in preheated oven for about 55 minutes making sure to stir
mixture every 25 minutes.
Remove pan from oven and sprinkle cheese, bacon, and green onions
evenly on top.
Place pan back in oven for an additional 5-8 minutes, or until cheese
is fully melted.
Remove from oven and serve!!
