How much cooking time you need for the meatloaf depends on what shape you make
the loaf before you bake it. One way we like to do meatloaf around here is to
either make or buy meatloaf mix from our favorite butcher shop, then make
individual loaves that weigh about eight to ten ounces each. I then brown them
lightly on the top and bottom sides, then place them into a preheated
375-degree oven for about 15 minutes. I then brush the mini loaves with my
ketchup glaze and return to the oven for 5 minutes to set the glaze. If you
try this, you would need to make sure that the meat mixture is stiff enough to
hold its shape free form. I wouldn't try to bake half the amount of meat
mixture in the same size loaf pan you were going to use for the full recipe.

Hi, just curious, since you put the ½ cup ketchup on the bottom of the pan,
did you spread the meat loaf mixure over the whole pan or leave it in a loaf

We made this for a party last night with really good results
Best Ever Meat Loaf
3 pounds ground chuck
1 pound ground mild sausage
5 slices lean bacon
1 cup oatmeal or 1 1/2 cups crushed cornflakes
1 large onion, diced
1 large green pepper, diced
1 large red pepper, diced
1 (10-ounce) can condensed tomato soup, undiluted
1 cup ketchup
1 1/2 teaspoons salt
1 teaspoon pepper
2 tablespoons prepared horseradish
1/2 cup ketchup
1. Preheat oven to 350*F (175*C).
2. Lightly mix all the above ingredients, except for the 1/2 cup ketchup, in
a large mixing bowl.
3. Spread the 1/2 cup ketchup in the bottom of a 13 x 9 x 2-inch baking pan.
4. Shape meat loaf and place in the prepared baking pan. Lay the bacon
strips on top of the meat loaf.
5. Bake, uncovered, for 1 hour and 45 minutes. Allow meat loaf to sit for 10
minutes before serving.
Makes 12 servings.
