Apple Pies Made With Cheese Dough
Dough
4 ounces hard cheese
5-1/2 ounces butter or margarine
1/4 teaspoon salt
9-1/2 ounces flour
5 tablespoons ice water
Filling
14 ounces apples
1-2 tablespoons lemon juice
Pinch of nutmeg
Sugar to taste
Vanilla
1/2 teaspoon cinnamon
2-3 tablespoons milk for brushing the pies
Sugar for sprinkling
Sift flour with salt into a large bowl. Finely grate cheese. Dice cold
butter. Add cheese and butter to the flour mixture and stir until mixture
resembles crumbs. Add ice water and mix until a dough forms. Form dough into
a ball, wrap in plastic and refrigerate for an hour. Peel, core and dice
apples, drizzle with lemon juice. Sprinkle with sugar, nutmeg and cinnamon
and mix well. Add vanilla. Roll the dough out 1- to 1-1/2 inches thick.
Using a large mug, cut out rounds of dough 3-4 inches in diameter, place a
portion of filling in the center of each round and form a small pie. Place
pies in a parchment-lined baking pan, brush with milk and sprinkle with
sugar. Bake at 400 degrees for 25-30 minutes or until brown.
