Brad,

Audacity cannot burn CD's.

Possibly the problem is that iTunes uses the Title tag of the 
song (rather than the file name) to sort the songs in its
window. You are not the only one who finds it annoying. 

You can find other CD burning programs for Mac if you search 
the internet. 

For example:
http://burn-osx.sourceforge.net/Pages/English/home.html .

I have no idea if it is good for VI users. But just search around.
