Generally normal springs and gas springs or pneumatic pistons. Even for
stage separation where you have RCS on one or both sides it's usually
preferred to use springs to get initial clearance.
If you're rushing or Russian, just light the engine before stage separation.

* You have mechanical release
some contrived mechanical device
pyro release ( bolts, cutting charge, ... )
* separation of the (created) bodies by introducing some impulse.
working on one or both bodies
spring ( works on both bodies due to reaction forces)
thruster ( only one item is moved.)
