Understanding Color Management by Abhay Sharma is quite a good introduction. Real World Color Management by Fraser, Murphy and Bunting is also good. Both these books are a bit out-of-date, but they cover most of the basics without going into the maths. They may be a good intro to RWG Hunt (and somewhat less expensive!).
