In years gone by, spammers would indeed set up actual mailing list software on unsuspecting "victim" machines. The list-specific headers would be "fake" in the sense that the addresses mentioned would not give any clues to the actual location of the mailing list, but the spammer would be able to send further spam messages to everyone on the list by merely posting one message to the (real) address of the machine running the mailing list. The current popularity of botnets means that mailing lists are a less common way of sending spam (I haven't seen any for years...)
