Hi Trace.
To answer your question, stick them on loud speaker and buy an olympus DP311 or micro speak recorder or similar. that would be proof enough that you'd spoken to them.

nope, i'm not in to recording every conversation i have but i recently
purchased some items over the phone from currys, they lead me to believe
that i was paying forty five pounds to have the tv and sound bar put on the
wall and the tv and sound bar paired,  the long and the short of it is that
its now in the hands of trading standards but it got me thinking, would it
be possible to record such conversations from my end as long as i told the
person i was speaking with that i'm doing it, i mean they do it, but, not on
the sales line apparently.

if so what'll do the job
