Hi Joe,
In addition to what Jackie has said, it sounds like you have the mail fetch new
data option set to push.
This is probably set automatically, so its nothing you have done.
To check and change this option do the following.
Open settings on your iPhone.
Scroll down to mail, contacts, and contacts, and double tap.
Find the fetch new data option, and double tap. Its not that far down.
You can choose to have your iPhone check your email on a schedule using this
option, or you can set it to manual so that you're in control of when the email
is checked.
Also, turn off the push option to stop mail being delivered automatically.
