Jill, Sounds like you've really got it.  Using food as a lure to get the
behavior you want, then clicking and then the lure becomes the treat.  Then
building duration of the behavior if needed. This can work with toys as well
as food, though toys take longer for a dog to enjoy.   I have found that
the hand/arm motions used with a food lure often turn into a hand signal for
a specific behavior.
