Leave the domain and domain controller ones alone for the moment - create a test OU, some test users and computers. Create a profile from the ground up, then start GPO-ing. People tend to be in two camps - most restrictive - then slacken if and when you really need to, and alternatively, just tactically restrict the things you know you are concerned with. The first approach is more traditional from a computer security perspective.
