I just bid the highest price I'm prepared to pay, and let ebay do the rest. The highest price is not the "wouldn't it be great if I got it for that price" rather its the price at which you expect buyers remorse to set in if you do turn out to be the highest bidder. If its a commodity item i.e. one where there will be 60-100 up in any given week, you just do your homework, find the average price, and pick a number below or above that depending on how long you are prepared to wait. If its rare or exotic I know how much its worth to me and if it goes above that I just feel I've done the seller a service by pushing up the price. I don't get annoyed as I know that if I had to pay more, I wouldn't have been happy. My key thought is just this: A fair price is what I'm prepared to pay.
