Gideon, In stretching fabric over a seat I used metal gromets along the edges (folded over), and laced the materiel to the seat frame. This is the easiest part of building a mesh seat, while building the seat frame itself is much more time consuming. This was a basic rectangle of 1/2 round tubing, .032, bent up for the outside frame, then two supports brazed across the top and bottom. The supports had tabs welded on for attaching the seat frame to the bike. I used nylon mesh for the seat, but I see no reason why canvas would not work just as well. The biggest advantage of nylon is that sweat will not soak into the materiel. While some builders had an extra margin of fabric to wrap around their seat frame prior to lacing, others stretched the fabric in the middle of their seat, and only the laces wound around the frame, just like a trampoline. Your choice there. I wrapped the fabric around the sides, but fought with tension constantly. I hear zip ties work well too.
