Go to File - Export and use the "Export to a file" option.  Then select
PST as the file format, and this will create a compressed file
containing all of your Outlook items.  I believe for Outlook 2000, the
maximum size a PST file can be before it is at high risk of corruption
is 2G, so if you have less than 2G of data to back up, you should be
fine.
