Go into Tools - Options and uncheck to save a copy of sent mail.

Then Make a rule to send all sent mail that contains a @ to the sent items
folder EXCEPT the one for your client.

Then Make another rule to send all the sent mail that contains your clients
address to the client folder.

I tried this and all sent mail goes to the sent mail folder except the one
clients that goes to that individual folder.
