I'm afraid you've really got me with that one, so I hope someone else is
reading!! Meantime, perhaps you should check the other Tabs ..... I'm not
sure, but perhaps Preferred Column and Cell width are causing it?

Thank you for responding. I have unchecked those boxes but they seem to
keep toggling back on when I touch the table again?

You could try checking (\Table\Table Properties\Table tab) and see whether,
this time, the table is set with a "Preferred width" from a default setting.
I often get this problem and, if that's it, you just need to uncheck the
relevant box.
