It's pretty much the same as making rules for items you receive. When you go
to Tools> Rules and Alerts, click on New Rule at the top, then choose to
start from a blank rule .... You'll have two choices, apply the rule to mail
you receive or apply it to mail you send .... Choose to apply it to mail
you've sent and tell it to move mail sent to that person to a folder you've
made.

filed into a sent items folder specifically for that client instead of
keeping it all in the main sent items folder?
