Electronically or on paper? Would there be hanging chads? Do Floridians
count?

I think you were right the first time, unless Sidgwick tried out
various spellings of his name occasionally. The Stanford
Encyclopedia of Philosophy has 'Sidgwick' both in the title of the
article on him and throughout the text; all of the items in the
bibliography refer to 'Sidgwick.' A search on abebooks.com for
'Sidgwick/Methods of Ethics,' turned up several copies of that notable
book; however, a search for 'Sidgewick/Methods of Ethics' got a
snarky response asking if I meant 'Sidgwick.'

The Oxford University Press uses 'Sidgwick' consistently, as in, e.g.,
'Essays on Ethics and Method, Henry Sidgwick. Edited by Marcus G. Singer.'

We could vote on it.
