Mike, Get this plugin from Fred Miranda: http://www.fredmiranda.com/shopping/BMWThis is what I use for all my B&W conversions, and I am very satisfied with the results, both on the web and in print.
Everything this does can be done by hand in Photoshop (using Channel Mixer and what not), but I am no Photoshop wizard, so for me, this was the best $30 I have spent in a long time.
