the trick with Extend Select mode in Word is that you can punch a key and select all the text up to that character.  So hit F8 to turn extended Select Mode on, then hit a period, and you've selected up to the end of the current sentence.  You can repeat this keystroke as often as you want to select consecutive sentences, and you can use any other keystroke and keep extending the selection.
