I know about the full keyboard navigation. However, I thought that there were no fastforward and rewine commands. I was wrong. I found them burried on a old iTunes manual on the web (from version 8 I believe). I tried them and would you look at that, they worked. So I apologize if I miss lead you.

In iTunes if you want to use the keyboard to do so, there is an option
in the preferences saying full keyboard navigation enabled. After that
these shortcuts work. I use version 10 latest one.

thought in addition to Yadiel's about the JAWS pass-through keystroke,
JAWS
key + 3 (on the row above the letters). While in iTunes, press JAWS key +

i want to use my iTunes "ctrl Alt arrow keys" to fast forward and rewind
on
a track but these hotkeys are assigned to jaws table navigation. how can i
do something to change or disable these hotkeys in itunes so that i can
freely use keyboard to navigate the songs.
