Laura, by far the most accessible package for us is Cakewalk Sonar, along with the free Jaws scripts for it called JSonar.

http://www.midimag.org/If you're a complete novice when it comes to doing midi, recording, mixing, editing etc. on the computer, you might be better served by the CakeTalking package from Dancing Dots, which consists of both scripts and a very long tutorial full of step-by-step instructions.
