check out this document. It lists the key tips in a table. The first cell in a each two-cell table is the command, and the second one is the key tip. Each table is one command on the upper ribbon. If you first find the command you want in the list, then use control-insert-t to put the document in a table, you can find which table you are in, which is the first key of the key tip. Looking up 'sort', you find 's o'. Pressing control-insert-t tells you you are in the home table. Thus the key tip for sort is alt-h s o.
