There could be many ways to achieve this. But go for a small lab first
using Virtualization.
Use LDAP separately and NFS separately so that both will not fail at the
same time. If you implement both in the same high end desktop (which you
are saying when you write that there is no server), with this at least
there will not be any single point of failure.
Also I would recommend the following
Zentyal - for LDAP and other important things like Firewall etc., and in
case you need to provide the email also to the students - you can give that
also
Go for a storage unit using either FreeNAS, Nexenta or OpenFiler. All of
these will be supporting NFS protocol.
The basic reason for suggesting these things would be to have more features
than what you have been asking as at a later time you might be needing
those.
One more reason is that all these have a good GUI which will be useful as
the time goes by.
Also you can look at Proxmox which is based on KVM (also OpenVZ support is
there) for Virtualization. (www.proxmox.com) just launched a new version
with Live Snapshots
