When you say service account, do you mean you have a resource user/mailbox which you have then given your users access to send on its behalf? Eg. ParkingSpot@xxxxxxxxxxx ? If yes, setup a mail delivery restriction limiting who can email the service account through dsa.msc (I'm assuming the service account has a mailbox associated with it?) If auditing isn't an issue you could also use an external vbscript to relay emails off your mail server. The script can be configured to prompt for destination email address, even originating email address (dangerous, generally not recommended), subject, message body.
