Well...you cannot rename the root, just the display name. By allowing another routing DNS name, should and will not have any problem on the root/site directory structure or integrity. Configure the new MX record to jive to the machine. Go into IMC from the Exchange Admin and you have to add the new domian name for proper routing. Select email domain from the Internet Mail tab and simply add both domain names it to.
